Apples

Red, green and yellow apples, sold by the plate of six. All three keep for weeks in the fridge, which makes them the most forgiving fruit we sell.

The difference matters more than the colour suggests. Red is sweet and crisp, and it is the eating apple. Green is tart and dense, and the only one of the three that keeps its shape in a pie or a tray bake. Yellow is the softest and sweetest — easiest for small children, and it cooks down to a smooth sauce with almost no sugar.
