Orange is the practical one: it keeps for weeks, juices well, and the zest is worth as much as the flesh. Pomegranate is the best keeper of the three and the one to judge by weight, since a heavy fruit is full of seed and a light one of the same size is mostly pith. Peaches are the opposite of both — they arrive firm, need two or three days on the counter, and are judged by the smell at the stem rather than the red blush, which is variety, not ripeness.
