Round Cabbage

A round green cabbage, looser in the leaf than the white sort and a little sweeter. Good where you want the leaves to separate rather than shred — stuffed cabbage rolls, or leaves blanched and used as a wrap.

It cooks faster than a tight white head, so treat it more gently: a few minutes in a hot pan rather than a long braise, or it goes to mush.

Choose a head that feels heavy for its size with springy, unbruised leaves.

Fridge, whole and unwrapped. Being looser-leaved it does not keep as long as a dense white cabbage.
